REFRESH SPRING TEA SANDWICHES

Several different kinds of sandwiches were served at the Refresh Spring Tea - chicken salad, cucumber, and pimiento cheese. Saundra Stroud and Leann King both made chicken salad with cooked chicken breasts, grapes, and mayo, but have no written recipe. While both recipes are somewhat similar, Leann adds diced apple and crushed pineapple to hers. Saundra adds finely chopped onion, chopped hardboiled eggs, seasoning salt, lemon pepper, garlic powder, and pickle relish to hers. Perhaps you can pick and choose from these two ladies' recipes and come up with your own favorite chicken salad.




Pimento Cheese by Pam Gross
2 cups sharp cheddar cheese, grated
2 small jars diced pimentos
1 cup mayo
1 1/2 tsp. garlic powder

Mix all together. Flavor is better if allowed to mingle overnight.




Cucumber Sandwiches by Paula Roten
white bread, cut into small rounds
Philadelphia Chive and Onion Cream Cheese Spread
cucumbers, sliced as thinly as possible (a mandolin works great)
Greek Seasoning


Spread the cream cheese on the bread round. Top with a thin slice of cucumber. Lightly sprinkle with Greek Seasoning.
