RECIPE OF THE WEEK by Saundra Stroud

Hopefully very soon, we will have some good soup weather.  Once again this recipe comes from one of our own.  Pat Rister made this for Care Group, and everyone really enjoyed it--------even the men!  And it's easy to prepare.
 
CREAMED SQUASH SOUP
 
2 lbs. yellow squash
1 medium to large onion (chopped)
1 can chicken broth
1 tsp. ground ginger
salt and pepper, to taste
1 (8 oz.) pkg. cream cheese, softened 
 
Boil sliced squash & chopped onions in chicken broth until tender.  Add ginger, salt & pepper to taste while boiling.
Remove from heat and add cream cheese, stirring until partly mixed.  Place in blender and puree until smooth.
 
May be garnished with bacon bits if desired.  Serve hot.
Serves 6-8
