FRENCH TOAST CASSEROLE by Saundra Stroud

This was prepared by Elizabeth Bowman for our Care Group Christmas Social this past Sunday night.  It was absolutely delicious!  She assured us that it was so very easy to make.  Looking at the recipe, I would agree.  This is not just a Christmas recipe but would be good for any occasion.

 French Toast Casserole
 1 1/2 sticks unsalted butter
 1 1/2 cups packed light brown sugar
 2 tsp. cinnamon
 1 loaf thick white bread, such as Texas toast, crusts removed
 2 cups milk
 6 large eggs


Preheat oven to 350 degrees.

Melt butter in a small saucepan over medium heat. 
Add brown sugar and 1 tsp. cinnamon and stir to make paste.
Put the paste into the bottom of a 9x13 casserole dish.  
Lay the bread on top of the paste in 2 layers. 
In a separate bowl, combine the milk, eggs, and remaining 1 tsp. of cinnamon.  
Pour the mixture over the bread in the dish.

Bake for 30 minutes, or until top has risen a bit and is golden brown. Do not cover.
Makes 6-8 servings.
